I can't believe no one has mentioned The Dark Tower series by Stephen King. An amazing story and twist on what fantasy is.

But also: Xanth (Piers Anthony), Vurt (Jeff Noon), Flashing Steel (Masayuki Shimabukuro), Nunchaku and Sai (Ryusho Sakagami), Tao of Jeet Kune Do (Bruce Lee) and just about every other book written by him.

I like The Belgariad by Eddings and The Wheel of Time by Jordan. I also just picked up some of "The Noble Dead" series by Barb and J. C. Hendee. Not sure how those will be yet.
