According to Anandtech...AnandTech: The Radeon HD 4850 & 4870: AMD Wins at $199 and $299 a single 4870 outperforms a single 3870X2, so I would say go with the 4870.

Looks like you'll be pleased. The 3870X2 does perform a bit better in a couple of the benchmarks, but that is probably due to driver optimization. The performance of the 4xxx series should improve a bit more (it usually does) as the drivers are refined.
